Apple Cinnamon Ice Cream Pie

For the Crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

1 tsp cinnamon

For the Filling:

2 cups vanilla ice cream, softened to room temperature

1 ½ cups fresh Granny Smith or Honeycrisp apples, peeled and diced

½ cup brown sugar, packed

1 tsp vanilla extract

1 tsp lemon juice

1 tsp cinnamon

¼ cup walnuts, finely chopped (optional)

For the Topping:

1 cup heavy whipping cream

1 tsp vanilla extract

Ground cinnamon for garnish

Caramel sauce for drizzling (optional)

Instructions
 

Prepare the Crust:

    Preheat your oven to 350°F (175°C). In a mixing bowl, combine the graham cracker crumbs, melted butter, granulated sugar, and cinnamon. Stir until the mixture is uniform and crumbly. Firmly press the mixture into the base and up the sides of a 9-inch pie pan to form an even crust. Bake in the preheated oven for 10 minutes or until golden brown. Once baked, remove from the oven and allow it to cool completely on a wire rack.

      Prepare the Filling:

        In a medium-sized bowl, combine the diced apples with lemon juice to prevent browning. Add brown sugar, vanilla extract, and cinnamon, stirring gently until the apple pieces are fully coated. If you choose to include walnuts, fold them in now for an extra crunch.

          Combine with Ice Cream:

            In a large bowl, gently fold the softened vanilla ice cream into the apple mixture. Be careful to mix just until combined; you want to maintain some firmness in the ice cream for the best texture in the finished pie.

              Assemble the Pie:

                Spread the apple-ice cream mixture into the cooled graham cracker crust, smoothing the top with a spatula for an even surface. Cover the pie with plastic wrap and place it in the freezer. Allow it to freeze for at least 4 hours, or until the filling is firm.

                  Prepare the Topping:

                    In a mixing bowl, whip the heavy cream using an electric mixer until soft peaks begin to form. Add in the vanilla extract and continue whipping until stiff peaks form and the cream is fluffy.

                      Serve:

                        Once the pie has set, remove it from the freezer and let it sit at room temperature for about 10 minutes to soften slightly.
