Baked Feta Tomato Pasta with Chicken

8 ounces (225g) penne pasta

200g block of feta cheese

1 pint (300g) cherry tomatoes, halved

1 pound (450g) boneless, skinless chicken breast, diced into bite-sized pieces

4 cloves of garlic, finely minced

1/4 cup (60ml) extra virgin olive oil, plus more for drizzling

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and freshly ground black pepper, to taste

Fresh basil leaves, for garnish

Grated Parmesan cheese, for serving (optional)

Preheat the Oven: Begin by preheating your oven to 400°F (200°C) to ensure it’s hot and ready for baking.

    Prepare the Baking Dish: In a large, oven-safe baking dish (approximately 9x13 inches), combine the halved cherry tomatoes, diced chicken breast, and minced garlic. Drizzle with olive oil and season with dried oregano, dried basil, salt, and freshly ground black pepper. Toss the ingredients together with a spoon until everything is well-coated in the oil and seasonings.

      Add Feta Cheese: Create a small well in the center of the mixture and place the feta cheese block within this well. Drizzle a bit of extra olive oil over the top of the feta, then sprinkle it lightly with salt and pepper for extra flavor.

        Bake: Carefully place the baking dish in the preheated oven. Bake for approximately 25-30 minutes, or until the chicken is cooked through and the cherry tomatoes are blistered and juicy. You want the feta cheese to become soft and creamy.

          Cook the Pasta: While the chicken and feta bake, cook the penne pasta according to the package instructions in a pot of salted boiling water. Once al dente, drain the pasta and set it aside.
