Ingredients

4 bone-in, skin-on chicken thighs

2 large onions, thinly sliced

4 cloves garlic, minced

1 cup beef broth

1 cup chicken broth (for a non-alcoholic option)

2 tablespoons olive oil

1 tablespoon balsamic vinegar

2 teaspoons fresh thyme leaves (or 1 teaspoon dried thyme)

1 teaspoon sugar

Salt and pepper, to taste

1 cup grated Gruyère cheese (or substitute Swiss cheese for a milder flavor)

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Set your oven to preheat at 400°F (200°C). This ensures a consistent temperature for even cooking.

Sauté the Onions: In a large oven-safe skillet placed over medium heat, pour in 2 tablespoons of olive oil. Once hot, add the thinly sliced onions. Sauté them, stirring occasionally, until they are beautifully caramelized and achieve a golden brown color, approximately 15-20 minutes. When they are almost done, add the minced garlic and continue to cook for another 1-2 minutes until the garlic is aromatic.

Incorporate Flavoring Ingredients: Into the same skillet, stir in the balsamic vinegar, fresh thyme, and sugar, mixing well. Next, pour in the beef broth and chicken broth, scraping the skillet’s bottom gently to lift any flavorful browned bits stuck there. Allow this mixture to simmer for about 5 minutes, letting the flavors meld together.

Prepare the Chicken: Use paper towels to pat the chicken thighs dry; this helps to crisp the skin while cooking. Season each thigh generously with salt and pepper on both sides. Place the chicken thighs into the flavorful onion mixture, ensuring they are skin-side up.

Bake the Chicken: Carefully transfer the skillet to your preheated oven. Bake the chicken for 25-30 minutes, or until it is fully cooked and reaches an internal temperature of 165°F (74°C).

Add the Cheese: In the last 5 minutes of baking, evenly sprinkle the grated Gruyère cheese over the tops of the chicken thighs. Return the skillet to the oven and watch as the cheese melts and bubbles to a delicious golden state.

Garnish and Serve: Once out of the oven, allow the chicken to rest for a couple of minutes. For a fresh finish, garnish generously with chopped parsley just before serving.

Enjoy: Serve the chicken warm, ideally accompanied by a side of crusty bread or fluffy mashed potatoes, perfect for soaking up the rich, savory sauce.
