Ingredients

6 bone-in, skin-on chicken thighs

1/4 cup honey

1/4 cup Dijon mustard

2 tablespoons apple cider vinegar

1 tablespoon olive oil

3 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley for garnish (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C). To make cleanup easier, line a baking dish with parchment paper.

Prepare the Marinade: In a medium-sized mixing bowl, combine the honey, Dijon mustard, apple cider vinegar, olive oil, minced garlic, dried thyme, smoked paprika, and a pinch of salt and pepper. Whisk everything together until you achieve a smooth and well-blended marinade.

Marinate the Chicken: Place the chicken thighs in a large resealable bag or a bowl. Pour the prepared honey mustard marinade over the thighs, ensuring they are thoroughly coated. Seal the bag or cover the bowl with plastic wrap, and refrigerate for a minimum of 30 minutes. For even better flavor, marinate the chicken for up to 4 hours.

Arrange in Baking Dish: After marinating, take the chicken thighs out of the marinade and arrange them in the prepared baking dish, placing them skin side up. Drizzle any leftover marinade on top to enhance the flavor.

Bake the Chicken: Transfer the baking dish to the preheated oven and bake for 35-40 minutes. The chicken is done when it reaches an internal temperature of 165°F (75°C) and is beautifully golden brown and crispy on the outside.

Broil for Extra Crispiness: For an extra crispy skin, switch your oven to broil mode and broil the chicken for an additional 3-5 minutes. Keep a vigilant eye on it to avoid burning.

Garnish and Serve: Once cooked, take the dish out of the oven and allow the chicken to rest for a few minutes. If desired, garnish with freshly chopped parsley before serving. This dish pairs wonderfully with your favorite sides!
