Ingredients

For the BBQ Cauliflower:

1 cup barbecue sauce (your preferred brand or homemade)

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

Salt and black pepper to taste

For the Ranch Slaw:

2 cups green cabbage, finely sliced

1 cup purple cabbage, finely sliced

1 large carrot, grated

1/2 cup ranch dressing (store-bought or homemade)

1 tablespoon apple cider vinegar

1/4 teaspoon black pepper

1/4 teaspoon celery seed (optional)

For Serving:

8 small corn or flour tortillas

Fresh cilantro, chopped for garnish

Lime wedges, for serving

Instructions

Prepare the Cauliflower:

    - Preheat your oven to 425°F (220°C).

      - In a large mixing bowl, combine the cauliflower florets with olive oil, smoked paprika, garlic powder, and a generous sprinkle of salt and black pepper. Toss well to ensure all florets are evenly coated.

        - Spread the seasoned cauliflower in a single layer on a parchment-lined baking sheet. Roast in the preheated oven for 25-30 minutes, or until the florets are golden brown and tender, stirring midway through to ensure even cooking.

          Add BBQ Sauce:

            - After roasting, carefully remove the cauliflower from the oven and return it to the mixing bowl. Pour the barbecue sauce over the cauliflower and toss until all florets are thoroughly coated.

              - Return the sauced cauliflower to the baking sheet and bake for an additional 5-10 minutes, allowing the sauce to caramelize and enhance the flavors.

                Make the Ranch Slaw:

                  - In a large bowl, combine the finely sliced green cabbage, purple cabbage, and grated carrot.

                    - In a separate small bowl, whisk together the ranch dressing, apple cider vinegar, black pepper, and celery seed (if using). Pour this dressing mixture over the cabbage and carrot, then toss until everything is evenly coated. Let it sit to meld the flavors while you finish the tacos.

                      Warm the Tortillas:

                        - While the cauliflower and slaw are finishing, warm the tortillas in a dry skillet over medium heat. Heat each tortilla for about 30-60 seconds on each side, or until they are warm and pliable.

                          Assemble the Tacos:

                            - To assemble, place a generous scoop of the BBQ cauliflower onto each tortilla, followed by a hearty portion of the ranch slaw.

                              Garnish:

                                - Finish each taco with a sprinkle of chopped fresh cilantro and a squeeze of lime juice for an extra burst of flavor.

                                  Serve:

                                    - Serve your tantalizing BBQ cauliflower tacos warm and offer extra lime wedges on the side for those who enjoy an additional zesty kick.
