6 strips of bacon, cooked until crispy and crumbled

1 cup shredded sharp cheddar cheese, divided

1 cup sour cream

1 packet ranch seasoning mix (approximately 1 oz)

3 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

2 green onions, sliced (for garnishing)

Fresh parsley, chopped (for garnishing)

Instructions
 

Preheat the Oven: Start by preheating your oven to 400°F (200°C) to ensure it's hot enough for baking.

    Prepare the Potatoes: In a large mixing bowl, combine the halved baby potatoes with olive oil, garlic powder, onion powder, and a generous pinch of salt and pepper. Toss the potatoes thoroughly to ensure they are evenly coated with the oil and seasonings.

      Bake the Potatoes: Transfer the coated potatoes to a baking sheet and spread them out in a single layer. Place them in the preheated oven and bake for about 25-30 minutes, or until they are golden brown and fork-tender. You want them crispy on the outside and fluffy on the inside.

        Prepare the Ranch Mixture: While the potatoes are baking, take a separate bowl and combine the sour cream, ranch seasoning mix, and half of the crumbled bacon. Mix thoroughly until all ingredients are well incorporated and set aside.
