Cheesy Broccoli and Bacon Casserole

Ingredients
  

4 cups fresh broccoli florets

6 strips of bacon, chopped into bite-sized pieces

1 cup cooked rice (white or brown)

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1 can (10.5 oz) cream of mushroom soup

1/2 cup milk

1 tsp garlic powder

1/2 tsp onion powder

Salt and pepper, to taste

1/4 cup breadcrumbs (optional, for topping)

Instructions
 

Preheat your oven to 350°F (175°C) and grease a 9x13 inch casserole dish.

    In a large pot of boiling water, blanch the broccoli florets for 2-3 minutes until bright green and slightly tender. Drain and set aside.

      In a skillet over medium heat, cook the chopped bacon until crispy. Once done, transfer the bacon pieces to a paper towel-lined plate to drain excess grease.

        In a large mixing bowl, combine the cooked rice, blanched broccoli, crumbled bacon, sharp cheddar cheese, mozzarella cheese, cream of mushroom soup, milk, garlic powder, onion powder, salt, and pepper. Stir until everything is evenly mixed.

          Pour the mixture into the prepared casserole dish, spreading it out evenly.

            If desired, sprinkle breadcrumbs on top for an added crunch.

              Bake in the preheated oven for 25-30 minutes, or until the casserole is bubbly and the top is golden brown.

                Remove from the oven and let it cool for a few minutes before serving.
