1 lb (450g) boneless, skinless chicken breasts, cubed

1 cup uncooked rice (choose white or brown based on preference)

2 cups chicken broth (or water, if preferred)

1 cup shredded cheese (cheddar or a Mexican blend for extra flavor)

1 cup black beans (canned, rinsed, and drained)

1 medium onion, finely chopped

2 cloves garlic, minced

1 tsp ground cumin

1 tsp chili powder

Salt and pepper to taste

1 cup salsa (your favorite variety)

4 large flour tortillas

1 tbsp olive oil

Fresh cilantro, chopped (for garnish)

Sour cream or guacamole (optional, for serving)

Cook the Rice: In a medium saucepan, combine the uncooked rice with chicken broth. Bring to a boil over medium-high heat. Once boiling, reduce the heat to low, cover the pan, and allow the rice to simmer for 18-20 minutes (or follow package instructions) until tender. Once cooked, fluff the rice with a fork and set aside.

    Prepare the Chicken Filling: Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté for 3-4 minutes, or until it becomes translucent. Stir in the minced garlic and sauté for another minute until fragrant.

      Cook the Chicken: Add the cubed chicken to the skillet, seasoning it with ground cumin, chili powder, salt, and pepper. Cook the chicken for about 6-8 minutes, stirring occasionally, until it is completely cooked through and golden brown.

        Combine Ingredients: Once the chicken is cooked, lower the heat and stir in the cooked rice, black beans, and ½ cup of the salsa. Mix well to combine all ingredients, heating through for an additional 2-3 minutes. Taste the mixture and adjust seasoning if necessary.

          Assemble the Burritos: Lay the large flour tortillas on a clean flat surface. Spoon an equal portion of the chicken and rice mixture onto the center of each tortilla. Top generously with the remaining cheese. Fold in the sides of each tortilla and roll them up tightly from the bottom to secure the filling.

            Heat the Burritos: Return the same skillet to medium heat and place the burritos seam-side down. Cook for 2-3 minutes on each side until they are golden brown and crispy. Alternatively, preheat your oven to 375°F (190°C) and bake the burritos for 10-15 minutes for a crunchier texture.
