Cheesy Chili Mac Sliders

1 lb elbow macaroni

1 lb ground beef or turkey

1 can (15 oz) kidney beans, rinsed and drained

1 can (15 oz) diced tomatoes with green chilies

2 cups chili sauce (homemade or store-bought)

2 cups shredded cheddar cheese

1 cup shredded mozzarella cheese

1/2 cup diced onion

2 cloves garlic, minced

1 tsp chili powder

1 tsp ground cumin

1/2 tsp smoked paprika

Salt and pepper to taste

1 package slider buns (12 count)

Fresh cilantro or green onions for garnish (optional)

Instructions
 

Cook the Macaroni: Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to package instructions until tender but firm to the bite (al dente). Once cooked, drain and set aside.

    Brown the Meat: Heat a large skillet over medium heat. Add the ground beef or turkey to the skillet, breaking it apart with a spatula. Cook for 5-7 minutes until it is browned throughout. Drain any excess fat from the skillet.

      Add Aromatics: Incorporate the diced onion and minced garlic into the skillet with the cooked meat. Sauté for 2-3 minutes, stirring regularly, until the onions are soft and translucent.

        Mix in the Chili Ingredients: Add the rinsed kidney beans, diced tomatoes (including their juices), chili sauce, chili powder, cumin, and smoked paprika to the skillet. Stir well to combine, then bring the mixture to a gentle simmer. Let it cook for about 5 minutes to allow the flavors to blend. Season with salt and pepper to taste.

          Combine with Macaroni: Lower the heat and add the drained macaroni to the skillet. Stir thoroughly to combine with the chili mixture. Mix in 1 cup of the cheddar cheese and 1/2 cup of the mozzarella cheese, stirring until the cheese is fully melted and incorporated into the dish.

            Assemble the Sliders: Preheat your oven to 350°F (175°C). Carefully slice the slider buns in half horizontally. Place the bottom halves on a baking tray and generously spoon the cheesy chili mac mixture onto each bun half. Sprinkle the remaining cheddar and mozzarella cheeses on top.

              Bake: Cover the baking tray with aluminum foil and place it in the preheated oven. Bake for 10 minutes, then remove the foil and continue baking for an additional 5 minutes, or until the cheese is bubbling and has turned slightly golden.

                Garnish and Serve: Once baked, remove the sliders from the oven. If desired, garnish with freshly chopped cilantro or thinly sliced green onions. Serve warm and enjoy the delightful cheesy goodness!
