200g of cooked penne pasta

1 can (400g) of kidney beans, drained and rinsed

1 cup of marinara sauce

1 teaspoon of chili powder

1 teaspoon of ground cumin

Salt and freshly ground black pepper, to taste

4 large whole wheat tortillas

1 cup of colorful bell pepper strips (red, yellow, and green)

1 cup of zucchini strips

1 cup of shredded lettuce

1/2 cup of shredded cheese (cheddar or mozzarella work well)

Fresh cilantro or parsley, for garnish

Lime wedge, for squeezing (optional)

Prepare the Chili Mixture: In a medium saucepan set over medium heat, combine the cooked penne pasta, rinsed kidney beans, marinara sauce, chili powder, cumin, and a pinch of salt and freshly ground black pepper. Stir everything together thoroughly, allowing it to simmer for about 5–7 minutes. This simmering will help meld the flavors beautifully. Taste and adjust seasoning if needed.

    Sauté the Veggie Strips: In a separate skillet, heat a splash of olive oil over medium heat.
