2 cups rolled oats

1 cup diced apples (approximately 1-2 medium apples)

1/2 cup almond butter (or any nut/seed butter of your choice)

1/4 cup honey or maple syrup

1/2 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1/4 cup chopped nuts (walnuts or pecans work beautifully)

1/4 cup raisins or dried cranberries (optional)

2 tablespoons chia seeds or flaxseeds (optional)

Instructions
 

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Prepare an 8x8-inch baking dish by lining it with parchment paper, allowing some excess paper to hang over the edges for easy removal later.

    Mix the Wet Ingredients: In a large mixing bowl, combine the almond butter, honey or maple syrup, and vanilla extract. Using a spatula or a whisk, stir the mixture until it becomes smooth and well combined.

      Add the Apples and Seasoning: Gently fold the diced apples into the wet mixture until they are evenly distributed. Next, sprinkle in the ground cinnamon and salt, stirring to ensure the apples are well coated with these flavors.

        Combine with Oats: Add the rolled oats to the apple mixture. Stir vigorously until all the oats are fully mixed in and coated. If you are including nuts, raisins or dried cranberries, and chia or flaxseeds, gently fold them into the mixture at this point.

          Press into the Baking Dish: Transfer the oat and apple mixture into the prepared baking dish. Use a spatula or your hands to firmly press the mixture down into an even, flat layer, ensuring it’s compacted well.

            Bake: Place the dish in the preheated oven and bake for 25–30 minutes. Keep an eye on it and remove the dish when the edges start to turn a lovely golden brown.

              Cool and Cut: After baking, take the dish out of the oven and let the bars cool completely in the pan on a wire rack. Once they’ve cooled, use the parchment paper to lift the entire block out of the dish. Cut into squares or rectangles based on your preference.
