1 cup beef or lamb broth

1 teaspoon dried thyme

1 teaspoon dried rosemary

2 tablespoons olive oil

For the Mashed Potato Topping:

2 lbs potatoes, peeled and cubed

4 tablespoons unsalted butter

1/2 cup milk (use whole or half-and-half for a creamier texture)

1/2 cup shredded cheese (optional, for an extra flavor boost)

Instructions
 

Prepare the Mashed Potatoes:

    - In a large pot, fill with water and add a generous pinch of salt. Bring the water to a rolling boil.

      - Carefully add the peeled and cubed potatoes to the boiling water. Cook until tender, approximately 15-20 minutes. Check for doneness with a fork; they should be easily pierced.

        - Once tender, drain the potatoes and return them to the pot. Add the butter and milk, then season with salt and pepper.

          - Mash the mixture until smooth and creamy. If using cheese, stir it in now for added richness. Set the mashed potatoes aside.

            Cook the Meat Filling:

              - In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onions turn translucent, approximately 3-4 minutes.

                - Add the diced carrots to the skillet and cook for an additional 5 minutes, allowing them to soften.

                  - Introduce the ground lamb (or beef) to the skillet, breaking it apart with a spoon. Cook until browned and fully cooked through, roughly 6-8 minutes.

                    - If there's excess fat, drain it from the skillet. Then stir in the tomato paste, Worcestershire sauce, thyme, and rosemary, mixing well to incorporate.

                      - Pour in the broth and add the peas. Stir everything together and let it simmer for about 5 minutes, allowing the mixture to thicken slightly. Season to taste with salt and pepper.

                          - Preheat your oven to 400°F (200°C).
