Ingredients

2 cups fresh strawberries, hulled and sliced

1 cup heavy whipping cream

1 cup powdered sugar (divided)

1 teaspoon vanilla extract

1 package (14 oz) Graham crackers

1/2 cup sour cream (optional, for added tanginess)

Fresh mint leaves for garnish (optional)

Instructions

Prepare the Strawberries:

    - In a medium bowl, combine the sliced strawberries with 1/4 cup of powdered sugar. Gently toss the strawberries to coat them evenly, then allow them to sit for approximately 15 minutes. This resting time will draw out their juices and intensify their natural sweetness.

      Make the Whipped Cream:

        - In a large mixing bowl, pour in the heavy whipping cream. Add the remaining 3/4 cup of powdered sugar and the vanilla extract.

          - Using an electric mixer, whip the cream on medium-high speed until soft peaks form—this should take about 3-4 minutes. Be cautious not to overwhip; you're aiming for a light and airy texture.

            Optional Sour Cream Mixture:

              - If you choose to use sour cream, take 1 tablespoon of the whipped cream and mix it into the sour cream to lighten it. Then, gently fold this mixture back into the remaining whipped cream for a delightful tang.

Layer the Graham Crackers and Strawberries:

                  - Take a 9x13 inch baking dish and spread a thin layer of whipped cream on the bottom.

                    - Begin layering by placing half of the Graham crackers over the whipped cream, breaking them into pieces if needed to fit.

                      - Next, layer half of the sliced strawberries on top of the crackers, followed by another layer of whipped cream spread evenly over the strawberries.

                        Repeat Layers:

                          - Continue by adding a second layer of Graham crackers, followed by the remaining sliced strawberries and another layer of whipped cream. Finally, top the cake with one last layer of Graham crackers.

                            Chill and Serve:

                              - Cover the dish securely with plastic wrap and refrigerate for at least 4 hours, or overnight if your schedule permits. This chilling time allows the Graham crackers to soften and for the flavors to meld beautifully.

                                Slice and Enjoy:

                                  - When ready to serve, remove the cake from the refrigerator. Slice it into square portions and plate it up. For an extra touch, garnish with fresh mint leaves and additional sliced strawberries if desired.

Prep Time: 30 minutes | Total Time: 4 hours (plus refrigeration time) | Servings: 12
