2 cups cucumbers, diced (approximately 2 medium cucumbers)

2 cups cherry tomatoes, halved

1/2 cup red onion, finely chopped

1 cup Greek yogurt

2 tablespoons mayonnaise

1 tablespoon apple cider vinegar

1 teaspoon garlic powder

1 teaspoon dried dill (or 1 tablespoon fresh dill, finely chopped)

Salt and pepper, to taste

Fresh parsley, chopped (for garnish, optional)

Instructions
 

Prepare the Vegetables:

    - Rinse the cucumbers and cherry tomatoes under cold water to remove any dirt. For the cucumbers, peel if desired, then dice into uniform, bite-sized pieces for even texture. Halve the cherry tomatoes and place both the diced cucumbers and tomato halves into a large mixing bowl.
