Ingredients

2 cups fresh spinach, finely chopped

1 cup cream cheese, softened to room temperature

1 cup sour cream

1 cup shredded mozzarella cheese

1/2 cup finely grated Parmesan cheese

3 cloves garlic, minced

1/2 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon freshly cracked black pepper

1/4 teaspoon red pepper flakes (optional, for added spice)

1 tablespoon olive oil

Fresh parsley, finely chopped (for garnish)

Tortilla chips or a variety of fresh vegetables (for serving)

Instructions

Sauté the Spinach: In a large skillet, add the olive oil and heat over medium heat. Once the oil is hot, add the minced garlic and sauté for about 1 minute, or until it becomes fragrant but not browned. Next, add the chopped spinach to the skillet. Cook for 2-3 minutes, stirring occasionally, until the spinach is wilted and bright green. Remove from heat and allow to cool slightly.

Combine Ingredients: In a spacious mixing bowl, combine the softened cream cheese and sour cream. Stir in the shredded mozzarella cheese and grated Parmesan cheese. Add the onion powder, salt, black pepper, and red pepper flakes (if you're using them). Mix all the ingredients together until you achieve a smooth and creamy consistency, ensuring there are no lumps.

Incorporate Spinach: Fold the cooled sautéed spinach and garlic into the creamy cheese mixture. Gently stir until the spinach is evenly distributed throughout the mixture.

Bake the Dip: Preheat your oven to 350°F (175°C). Transfer the spinach dip mixture into a baking dish, spreading it out evenly across the surface. Bake in the preheated oven for 20-25 minutes, or until the top is bubbly and slightly golden.

Garnish & Serve: Once baked, remove the dip from the oven and allow it to cool for a few minutes. Sprinkle with finely chopped fresh parsley for a vibrant finish. Serve warm alongside tortilla chips or an assortment of fresh veggies to dip.
