Creamy Goat Cheese and Spinach Pasta

12 ounces of your favorite pasta (fettuccine or penne work great)

2 tablespoons extra virgin olive oil

3 cloves of garlic, finely minced

5 ounces of fresh spinach (approximately 8 cups)

8 ounces of goat cheese, softened to room temperature

1 cup of heavy cream

½ cup of grated Parmesan cheese

¼ teaspoon of red pepper flakes (optional, for a spicy kick)

Salt and freshly ground black pepper, to taste

Fresh basil leaves, for garnish

Zest of 1 lemon (optional, to brighten the dish)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a rolling boil. Add the pasta and cook according to the package instructions until it reaches al dente texture. Before draining, reserve 1 cup of the starchy pasta water. Drain the pasta and set aside.

    Sauté Garlic and Spinach: In a large skillet over medium heat, pour in the olive oil. Once hot, add the minced garlic and sauté for about 1 minute until fragrant and lightly golden. Next, add the fresh spinach to the skillet, stirring occasionally until it wilts and decreases in volume, about 2-3 minutes.

      Prepare the Creamy Sauce: Reduce the heat to medium-low. Add the softened goat cheese and heavy cream to the skillet with the spinach and garlic. Continuously stir until the cheese melts completely and the sauce turns into a smooth, creamy mixture.
