Creamy Roasted Pepper Lasagna

12 lasagna noodles

2 large red bell peppers, roasted and peeled

1 large yellow bell pepper, roasted and peeled

1 small onion, finely chopped

3 cloves garlic, minced

1 cup ricotta cheese

2 cups mozzarella cheese, shredded (plus additional for topping)

1 cup grated Parmesan cheese (divided)

2 cups fresh spinach or thawed frozen spinach

1 can (15 oz) crushed tomatoes

1 teaspoon dried oregano

1 teaspoon dried basil

½ teaspoon red pepper flakes (optional for heat)

Salt and pepper to taste

Olive oil for sautéing

Fresh basil leaves for garnish

Prep the Roasted Peppers: Preheat your oven to 450°F (230°C). Place the red and yellow bell peppers on a baking sheet and roast in the oven for 20-25 minutes. Turn them occasionally until the skins are nicely charred. Once roasted, remove them from the oven, allow them to cool, and carefully peel off the skins. Slice the peppers into strips and set aside for later use.

    Prepare the Lasagna Noodles: Cook the lasagna noodles as per package directions until they are al dente. Once cooked, drain the noodles and lay them flat on a clean kitchen towel or parchment paper to keep them from sticking together.

      Sauté the Aromatics: In a large skillet, heat a drizzle of olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until the onion becomes translucent. Add the minced garlic and cook for an additional minute until fragrant. Stir in the crushed tomatoes, dried oregano, dried basil, red pepper flakes (if using), and season with salt and pepper. Let the mixture simmer for around 5-7 minutes, then remove from heat and set aside.

        Prepare the Cheese Mixture: In a spacious mixing bowl, combine the ricotta cheese, half of the shredded mozzarella, ½ cup of the grated Parmesan cheese, and spinach. Mix well until everything is evenly combined and season with salt and pepper to taste.

          Assemble the Lasagna: In a 9x13 inch baking dish, start by spreading a layer of the tomato sauce evenly across the bottom. Lay down 3 lasagna noodles over the sauce. Next, spread half of the ricotta and spinach mixture over the noodles, followed by half of the roasted pepper strips. Add another layer of tomato sauce on top of the peppers. Repeat these layering steps once more (another set of noodles, the cheese mixture, peppers, and sauce) and finish with a final layer of noodles on top.

            Final Touches: Spread the remaining sauce over the top layer of noodles. Sprinkle the remaining mozzarella and Parmesan cheese over the sauce to create a cheesy topping.

              Bake the Lasagna: Cover the baking dish with aluminum foil. To prevent sticking, lightly spray the foil with cooking spray. Place the dish in the preheated oven and bake for 25 minutes. Remove the foil and continue baking for another 15 minutes, or until the cheese is bubbly and golden brown.

                Let It Rest: After taking the lasagna out of the oven, allow it to rest for 10-15 minutes before slicing. This step is crucial for the layers to set properly, making serving easier.
