It was a chilly evening, and as soon as I took the first bite, I felt an instant wave of comfort wash over me. The rich creaminess, combined with the savory sausage and tender potatoes, was pure bliss. Since that evening, I’ve made it a tradition to whip up my own version of this dish, and I can't wait to share my recipe with you.

Creamy Sausage Potato Casserole

1 lb (450g) mild or spicy Italian sausage, casings removed

4 large russet potatoes, thinly sliced (approximately 1/8 inch thick)

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup (240ml) heavy cream

1 cup (240ml) chicken broth (low-sodium preferred)

1 cup (100g) shredded sharp cheddar cheese

1 cup (100g) shredded mozzarella cheese

1 tsp dried thyme

1 tsp smoked paprika

Salt and pepper, to taste

2 tbsp olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the oven: Start by preheating your oven to 375°F (190°C) to ensure it's hot and ready for baking.

    Cook the sausage: In a large skillet, heat the olive oil over medium heat. Add the Italian sausage, breaking it apart with a spatula. Cook until browned and fully cooked through, about 6-8 minutes. Once done, transfer the sausage to a plate and set aside.

      Sauté the vegetables: Using the same skillet, add the chopped onion to the remnants of the sausage. Sauté for about 4-5 minutes, or until the onion is softened and translucent. Then, add the minced garlic and cook for another minute, stirring frequently until fragrant.

        Prepare the sauce: In a mixing bowl, combine the heavy cream, chicken broth, dried thyme, smoked paprika, salt, and pepper. Whisk the mixture until everything is well blended and set aside.

          Layer the casserole: Grease a 9x13-inch baking dish with a bit of cooking spray or butter. Begin layering by placing half of the thinly sliced potatoes at the bottom of the dish. Then, add half of the cooked sausage, followed by half of the sautéed onion and garlic mixture. Sprinkle with half of the cheddar and mozzarella cheese. Finally, drizzle half of the creamy sauce over this layer.

            Repeat the layers: In the same baking dish, repeat the process with the remaining potatoes, the other half of the sausage, onion-garlic mixture, and cheeses. Pour the rest of the creamy sauce on top, ensuring that everything is well covered.

              Cover and bake: Cover the casserole tightly with aluminum foil. Place it in the preheated oven and bake for approximately 45 minutes.

                Uncover and brown: After 45 minutes of baking, carefully remove the foil. Return the casserole to the oven and bake for an additional 15-20 minutes, or until the potatoes are fork-tender and the top is golden and bubbly.

                  Garnish and serve: Once baked, allow the casserole to rest for about 5-10 minutes before serving. Sprinkle chopped fresh parsley on top for a pop of color and a hint of freshness.
