Once your sauce has simmered to perfection, it's time to enhance its flavor with the right seasoning. Tasting and adjusting the seasoning is crucial in creating a balanced dish. Begin by adding salt gradually; this not only elevates the flavors but also helps to bring out the natural sweetness of the tomatoes. A pinch of freshly ground black pepper adds depth, while a sprinkle of red pepper flakes can introduce a subtle heat, perfect for those who enjoy a spicy kick.

Ingredients

8 oz (225g) pasta of your choice (penne or fettuccine are excellent options)

2 tablespoons extra-virgin olive oil

3 cloves garlic, finely minced

1 can (14 oz) crushed tomatoes (preferably San Marzano for better flavor)

1 cup heavy cream

1 teaspoon dried oregano

Salt and freshly ground black pepper, to taste

1 cup fresh basil leaves, finely chopped (reserve some for garnish)

½ cup freshly grated Parmesan cheese, plus more for serving

¼ teaspoon red pepper flakes (optional for a hint of heat)

Instructions

Boil the Pasta: In a large pot, bring salted water to a rolling boil. Add the pasta and cook according to package directions until it reaches al dente texture. Before draining, reserve 1 cup of the pasta water, then drain the pasta and set it aside in a separate bowl.

Sauté the Aromatics: In a large skillet set over medium heat, pour in the olive oil. Once the oil is hot and shimmering, add the minced garlic. Sauté for about 30 seconds, stirring frequently, until fragrant but not browned, as burnt garlic can impart a bitter taste.

Incorporate Tomatoes and Cream: Carefully pour the crushed tomatoes into the skillet, followed by the heavy cream. Gently stir to combine the ingredients, allowing the mixture to come to a gentle simmer for about 3-4 minutes, letting the flavors meld together.

Season the Sauce: Stir in the dried oregano, then season with salt, freshly cracked black pepper, and red pepper flakes (if desired). Taste the sauce, adjusting the seasoning according to your preference.

Combine Pasta and Sauce: Add the drained pasta directly into the skillet with the sauce. Toss gently to ensure the pasta is well-coated. If the sauce appears too thick, gradually add the reserved pasta water a bit at a time until you achieve the desired creaminess and consistency.

Finish with Basil and Cheese: Remove the skillet from the heat. Fold in the chopped basil and the grated Parmesan cheese, stirring well to incorporate. The heat of the pasta will help melt the cheese, creating a luscious sauce.

Serve and Garnish: Plate the creamy tomato basil pasta generously. Garnish with additional fresh basil leaves and a sprinkle of more Parmesan cheese for added flavor and visual appeal.
