Salt and freshly cracked black pepper, to taste

1 small red bell pepper, sliced into thin strips

1 small yellow bell pepper, sliced into thin strips

1 small red onion, thinly sliced

4 large whole grain tortillas or wraps

1 ripe avocado, sliced

1/2 cup fresh cilantro, roughly chopped

Lime wedges, for serving

Optional: sour cream or Greek yogurt, for topping

Preheat the Oven: Begin by preheating your oven to 425°F (220°C) to ensure it's hot enough for roasting the vegetables.

    Prepare the Cauliflower: In a large mixing bowl, combine the cauliflower florets with the extra-virgin olive oil, smoked paprika, ground cumin, garlic powder, onion powder, chili powder, and a sprinkle of salt and pepper. Toss thoroughly until the cauliflower is evenly coated in the spice mixture.
