Crockpot Turkey Chili Black Beans

1 lb ground turkey

1 can (15 oz) black beans, drained and rinsed

1 can (14.5 oz) diced tomatoes (with their juice)

1 can (8 oz) tomato sauce

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper (any color), diced

1 cup corn (fresh or frozen)

2 tablespoons chili powder (adjust to taste)

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon salt (or to taste)

1/2 teaspoon black pepper

1/2 teaspoon red pepper flakes (optional, for extra heat)

1 cup chicken or vegetable broth

2 tablespoons olive oil

Fresh cilantro, for garnish (optional)

Avocado slices, for serving (optional)

Shredded cheese, for serving (optional)

Sour cream, for serving (optional)

Instructions
 

In a large skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper to the pan. Sauté these vegetables until they are soft and translucent, which should take about 5 minutes.

    Next, add in the minced garlic along with the ground turkey. Using a wooden spoon, break up the turkey as it cooks, stirring frequently until it's browned and fully cooked (approximately 7-10 minutes).

      Transfer the cooked turkey and vegetable mixture to your crockpot. To this, add the drained and rinsed black beans, diced tomatoes (including the juice), tomato sauce, corn, chili powder, cumin, smoked paprika, salt, black pepper, and red pepper flakes (if using). Pour in the chicken or vegetable broth.

        Give the mixture a good stir to ensure all the ingredients are well combined and evenly distributed.

          Cover the crockpot and set it to cook on low heat for 6-8 hours or on high heat for 3-4 hours, allowing the flavors to meld together beautifully.

            Once the cooking time is up, taste the chili and adjust the seasoning if necessary. If the chili has thickened more than you'd like, feel free to add a little more broth to achieve your desired consistency.

              Serve the chili hot, garnishing each bowl with fresh cilantro, slices of creamy avocado, a sprinkle of shredded cheese, and a dollop of sour cream, if desired.
