Ingredients

1 pound ground turkey

1 medium onion, diced

2 cloves garlic, minced

1 can (15 oz) pure pumpkin puree

1 can (14.5 oz) diced tomatoes (with juices)

1 can (15 oz) tomato sauce

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon salt

1/2 teaspoon black pepper

9-12 lasagna noodles (uncooked)

15 oz ricotta cheese

1 cup grated Parmesan cheese

2 cups shredded mozzarella cheese

Fresh spinach (optional, for layering)

Fresh basil leaves (for garnish)

Instructions

Cook the Turkey:

    - In a large skillet over medium heat, add the ground turkey. Sauté until it starts to brown, approximately 5-7 minutes. Add the diced onion and minced garlic, continuing to cook until the turkey is fully browned and the onions become translucent, about another 3-5 minutes. If any excess fat accumulates, drain it before proceeding to the next step.

      Prepare the Sauce:

        - In a large mixing bowl, combine the browned turkey-onion-garlic mixture with the pumpkin puree, diced tomatoes (with their juices), tomato sauce, dried oregano, dried basil, salt, and black pepper. Mix thoroughly until all ingredients are well incorporated. Set the sauce aside.

          Layer the Lasagna:

            - In your crockpot, begin by spreading a thin layer of the turkey-pumpkin mixture evenly across the bottom. Next, place a layer of uncooked lasagna noodles over the mixture, breaking them as necessary to fit.

              - Spoon an even layer of ricotta cheese on top of the noodles, followed by a sprinkle of grated Parmesan and then a layer of shredded mozzarella. If you like, add a handful of fresh spinach for an extra burst of flavor and nutrition.

                Repeat Layers:

                  - Continue layering the ingredients using the same order: turkey-pumpkin mixture, lasagna noodles, ricotta cheese, Parmesan, mozzarella, and spinach. Repeat this process until you’ve used all of your ingredients, making sure to finish with a generous layer of mozzarella cheese on top.

                    Cook:

                      - Cover the crockpot and set it to cook on low heat for 4 to 6 hours, or until the noodles become tender and the cheese is melted, bubbly, and slightly golden.

                        Serve:

                          - After cooking, allow the lasagna to rest for about 10 minutes before slicing. Garnish each serving with fresh basil leaves for a vibrant touch and additional aroma.
