Cucumber & Tuna Egg Wraps

1 large cucumber, sliced into thin sheets (use a vegetable peeler or mandoline)

1 can (5 oz) tuna packed in water, thoroughly drained and flaked

2 large hard-boiled eggs, peeled and finely chopped

2 tablespoons mayonnaise

1 tablespoon Dijon mustard

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

Salt and freshly ground black pepper, to taste

1 tablespoon fresh lemon juice

Optional: 1/4 cup finely diced red onion or celery for an added crunch

Fresh arugula or spinach leaves for garnish

Prepare the Tuna Mixture: In a medium mixing bowl, combine the flaked tuna, chopped hard-boiled eggs, mayonnaise, Dijon mustard, chopped dill, salt, pepper, and lemon juice. If desired, incorporate the finely diced red onion or celery for additional texture. Mix everything thoroughly until well combined and creamy.

    Slice the Cucumber: With a vegetable peeler or mandoline, slice the cucumber lengthwise into long, thin sheets, approximately 1/8 inch thick. The thinner the slices, the more flexible they will be for wrapping.
