1 cup fresh spinach leaves, washed and dried

1/2 bell pepper, diced into small pieces (any color you prefer)

1/4 cup shredded cheese (such as cheddar, mozzarella, or your favorite)

Optional add-ins: diced tomatoes, cooked bacon or sausage, ripe avocado slices

Instructions
 

Whisk the Eggs: In a mixing bowl, crack the eggs and add the milk. Season with salt and pepper. Using a whisk, beat the mixture vigorously until it's fully blended and slightly frothy.
