Ingredients

1 French baguette, sliced into 1/2-inch thick pieces

2 tablespoons extra-virgin olive oil

2 ripe peaches, pitted and thinly sliced

6 ounces goat cheese, softened to room temperature

2 tablespoons honey

1 tablespoon fresh lemon juice

1 teaspoon fresh thyme leaves or 1/2 teaspoon dried thyme

Freshly cracked black pepper, to taste

Arugula or mixed greens, for garnish (optional)

Instructions

Prep the Baguette: Preheat your oven to 400°F (200°C). On a baking sheet, arrange the baguette slices in a single layer. Using a brush, lightly coat both sides of each slice with olive oil for an even crisp.

Toast the Bread: Place the baking sheet in the preheated oven and bake for 5-7 minutes, or until the baguette slices turn golden brown and crispy. Once done, remove from the oven and allow them to cool slightly.

Prepare the Peach Mixture: In a medium mixing bowl, combine the thinly sliced peaches, honey, fresh lemon juice, thyme, and a generous crack of black pepper. Gently toss the ingredients together, ensuring each peach slice is coated in the sweet and tangy mixture.

Spread the Goat Cheese: Take each toasted baguette slice and generously spread the softened goat cheese on top, allowing it to create a creamy base for the toppings.

Top with Peaches: Spoon a few pieces of the prepared peach mixture onto each goat cheese-covered crostini, making sure to drizzle some of the peach juices over the cheese for added flavor.

Garnish and Serve: For a touch of freshness, you can top the crostini with a small handful of arugula or mixed greens. If you like an extra hint of sweetness, finish with an additional drizzle of honey before serving.
