1 pound ground turkey

1 cup onion, finely chopped

3 cloves garlic, minced

2 cups carrots, diced

2 cups Yukon Gold or red potatoes, diced

1 cup celery, diced

1 can (14.5 oz) diced tomatoes, with juices

4 cups chicken or turkey broth

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon ground paprika

1/2 teaspoon freshly ground black pepper

1 bay leaf

2 cups whole wheat pasta (penne or rotini), uncooked

1 cup frozen peas

Salt, to taste

Fresh parsley, chopped (for garnish, optional)

Instructions
 

Brown the Turkey: In a large skillet over medium heat, add the ground turkey. Cook until it is browned and no longer pink, breaking it apart with a wooden spoon as it cooks. Once browned, drain any excess fat and transfer the turkey into the crockpot.

    Sauté the Aromatics: In the same skillet, add the chopped onion and minced garlic. Sauté for about 4-5 minutes until the onion becomes translucent and fragrant. Transfer this mixture to the crockpot, blending it with the browned turkey.

      Incorporate the Vegetables: To the crockpot, add the diced carrots, potatoes, and celery. Stir thoroughly to ensure the vegetables are evenly mixed with the turkey and onions.

        Combine Liquids and Spices: Pour in the diced tomatoes (with their juices) and add the chicken or turkey broth. Sprinkle in the dried thyme, rosemary, paprika, black pepper, and add the bay leaf. Stir everything together until well combined.
