2 cups graham cracker crumbs

1/4 cup unsweetened shredded coconut (plus extra for garnish)

1/4 cup unsalted butter, melted

1 teaspoon ground cinnamon

1/2 cup whipped cream (or coconut whipped cream for a vegan alternative)

1/4 cup chopped walnuts or pecans (optional for added crunch)

Instructions
 

Prepare the crust: In a medium bowl, combine graham cracker crumbs, melted butter, shredded coconut, and ground cinnamon. Mix until the texture resembles wet sand. Firmly press the mixture into the bottom of an 8x8-inch baking dish, using the back of a measuring cup to pack it tightly and evenly.

    Make the filling: In a large mixing bowl, combine the mashed bananas, coconut milk, honey (or maple syrup), vanilla extract, and lemon juice. Blend with an electric mixer or a whisk until the mixture is smooth and creamy, making sure all ingredients are well incorporated.

      Layer the filling: Pour the banana-coconut mixture over the crust in the baking dish, spreading it evenly with a spatula. Gently tap the dish on the counter to eliminate air bubbles and ensure an even layer.
