Ingredients

1 cup coconut milk (using canned for extra creaminess)

1/2 cup unsweetened almond milk

1 scoop vanilla protein powder (choose either plant-based or whey)

1/4 cup creamy almond butter

1/3 cup shredded unsweetened coconut

2 tablespoons maple syrup (or honey as a sweet alternative)

1 teaspoon pure vanilla extract

A pinch of sea salt

1/4 cup chopped almonds (to add delightful crunch)

Pop molds or small paper cups and popsicle sticks for serving

Instructions

Prepare Your Equipment: Start by cleaning your pop molds thoroughly, ensuring there’s no residue. If you're using paper cups, make sure to have popsicle sticks ready for later use.

Blend the Base: In a blender, combine the coconut milk, almond milk, vanilla protein powder, almond butter, shredded coconut, maple syrup, pure vanilla extract, and a pinch of sea salt. Blend on high speed until the mixture becomes completely smooth and all ingredients are well incorporated.

Incorporate Nuts: Transfer the blended mixture to a mixing bowl. Gently fold in the chopped almonds, distributing them evenly throughout the mixture for balanced crunch in every bite.

Fill the Molds: Carefully pour the mixture into your prepared pop molds, filling them just below the rim to allow for some expansion as they freeze. If using paper cups, fill them to the top for a generous portion.

Insert Sticks: For pop molds, follow the manufacturer’s guidelines to insert the sticks securely into the mixture. If you are using paper cups, place the sticks upright in the center of each cup.

Freeze: Set the molds in the freezer and allow them to freeze for at least 4 to 6 hours, or until they are solid and completely set.

Unmold the Pops: Once your pops are fully frozen, gently remove them from the molds. If they stick, run warm water over the outside of the molds for a few seconds to help loosen them up.

Serve and Enjoy: Serve the protein pops immediately for a refreshing treat, or place any leftovers in a freezer-safe container to enjoy later. These pops are a delicious and nutritious snack option, rich in protein!
