Ingredients

2 cups mixed frozen berries (strawberries, blueberries, raspberries, blackberries)

1 cup pineapple chunks (fresh or canned, drained if using canned)

1 medium ripe banana, sliced

1 cup diced kiwi (about 2 ripe kiwis)

1 cup coconut milk (or Greek yogurt for a creamier texture)

2 tablespoons honey or maple syrup (adjust based on desired sweetness)

1 tablespoon freshly squeezed lime juice (about half a lime)

1/2 teaspoon pure vanilla extract

Fresh mint leaves for garnish (optional but recommended)

Instructions

Prepare the Fruit: In a large mixing bowl, combine the frozen mixed berries, pineapple chunks, banana slices, and diced kiwi. Gently toss the ingredients together using a spatula or wooden spoon, being careful not to mash the fruit. Set aside.

Make the Dressing: In a separate medium bowl, whisk together the coconut milk (or Greek yogurt), honey or maple syrup, lime juice, and vanilla extract. Mix until the dressing is smooth and creamy, ensuring that the sweetener is fully dissolved.

Combine: Drizzle the dressing over the prepared fruit mixture. With a spatula, gently fold the dressing into the fruit until all pieces are evenly coated in the delicious creamy mixture.

Portion Out: Using a large spoon or ice cream scoop, evenly distribute the fruit salad into individual cups or small bowls. Make sure to leave a little space at the top of each cup to allow for some expansion as the fruit may release extra juices while freezing.

Freeze: Cover each cup with plastic wrap or place a lid on each bowl. Transfer the cups to the freezer and let them freeze for at least 2-3 hours, or until they are completely set and firm.

Serving: When you are ready to serve, remove the fruit cups from the freezer and allow them to sit at room temperature for about 5 minutes to soften slightly. If using, garnish each cup with fresh mint leaves for an added pop of color and freshness. Enjoy your refreshing Chilled Berry Bliss Fruit Cups!
