Ingredients

1 cup plain Greek yogurt

1/2 cup fresh raspberries (plus extra for garnishing)

1/4 cup honey or maple syrup (adjust according to your sweetness preference)

2 tablespoons freshly squeezed lemon juice

Zest of 1 lemon

1 teaspoon pure vanilla extract

A pinch of salt

Silicone ice cube tray or mini muffin tin for shaping

Instructions

Prepare the Raspberries: In a small bowl, gently mash the fresh raspberries using a fork. Aim for a consistency where the berries are slightly broken down but still retain some small chunks for added texture.

Mix the Yogurt Base: In a separate mixing bowl, combine the plain Greek yogurt, honey (or maple syrup), fresh lemon juice, lemon zest, pure vanilla extract, and a pinch of salt. Mix thoroughly until the ingredients are well incorporated and the mixture is smooth and creamy.

Combine: Carefully fold the mashed raspberries into the yogurt mixture. Take your time to avoid completely breaking the raspberries, as you want to maintain some delightful raspberry pieces for a burst of flavor in each bite.

Fill the Molds: Using a spoon or a silicone spatula, spoon the yogurt-raspberry mixture into your silicone ice cube tray or mini muffin tin. Press down gently to eliminate any air pockets, ensuring the mixture is compact.

Freeze: Place the filled molds in the freezer and allow them to freeze for at least 4 hours, or until the yogurt bombs are solidified.

Unmold the Bombs: After the yogurt bombs have fully frozen, gently remove them from the molds. If you encounter any resistance, lightly run warm water over the outside of the molds for a few seconds to help release them.

Serve and Enjoy: Arrange the frozen yogurt bombs on a serving plate. For an added touch, garnish with a few extra fresh raspberries and a sprig of mint. Indulge in this delightful, refreshing treat!
