Ingredients

1 cup crushed graham crackers

4 tablespoons unsalted butter, melted

2 tablespoons granulated sugar

2 cups cream cheese, softened to room temperature

1 cup powdered sugar

1 teaspoon pure vanilla extract

1 cup heavy whipping cream

2 cups frozen mixed berries (blueberries, raspberries, strawberries)

2 tablespoons honey or maple syrup (optional, for added sweetness)

Fresh berries and mint leaves for garnish (optional)

Instructions

Prepare the Crust: In a medium mixing bowl, combine the crushed graham crackers, melted butter, and granulated sugar. Stir well until the crumbs are fully coated in the butter and have a moist texture.

Assemble the Base: Spoon about a tablespoon of the graham cracker mixture into the base of each cup or dessert glass. Use the back of a spoon or your fingers to gently press down and ensure it forms an even, compact layer. Set the cups aside.

Make the Cheesecake Mixture: In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until it becomes creamy and smooth. Gradually add in the powdered sugar and vanilla extract, continuing to mix until the ingredients are fully incorporated and the mixture is lump-free.

Whip the Cream: In a separate bowl, whip the heavy cream using an electric mixer until stiff peaks form. Carefully fold the whipped cream into the cream cheese mixture using a spatula, taking care not to deflate the whipped cream.

Layer the Cheesecake: Evenly distribute the cheesecake mixture over the graham cracker crusts in each cup, filling them until they're about three-quarters full.

Add the Berries: In a small bowl, combine the frozen mixed berries with honey or maple syrup, if you choose to add some sweetness. Gently stir to coat the berries in the syrup, ensuring they are well mixed. Spoon the berry mixture generously on top of the cheesecake layer in each cup.

Freeze: Carefully place the cheesecake cups in the freezer for at least 4 hours, or until the cheesecake is firm to the touch.

Serve: When ready to enjoy, remove the cheesecake cups from the freezer and let them sit at room temperature for about 10 minutes to soften slightly for easier eating. Garnish each cup with fresh berries and a sprig of mint for an elegant touch, if desired.
