Ingredients

2 cups frozen strawberries

1 cup full-fat coconut milk (for optimal creaminess)

2 tablespoons chia seeds

3 tablespoons maple syrup (adjust according to desired sweetness)

1 teaspoon vanilla extract

A pinch of salt

Fresh strawberries and mint leaves for garnish (optional)

Small paper cups or silicone molds for serving

Instructions

Blend the Strawberries: In a high-speed blender, combine the frozen strawberries, coconut milk, maple syrup, vanilla extract, and a pinch of salt. Blend the ingredients on high until you achieve a smooth and creamy consistency. Make sure to pause occasionally to scrape down the sides of the blender, ensuring that all ingredients are thoroughly mixed together.

Incorporate Chia Seeds: After blending the strawberry mixture until smooth, add in the chia seeds. Blend again for an additional 10 seconds to evenly distribute the chia seeds throughout the mixture, enhancing both texture and nutrition.

Chill the Mixture: Pour the strawberry-chia mixture into a bowl or a pitcher. Allow it to sit at room temperature for about 10 minutes. This rest period lets the chia seeds swell, which contributes to a creamier texture in your ice cream.

Fill Cups: Take a ladle or measuring cup, and carefully fill your small paper cups or silicone molds with the mixture, filling each about three-quarters of the way full.

Freeze: Place the filled cups or molds in the freezer and let them freeze for a minimum of 4 hours, or until solid. For the best texture, freezing overnight is recommended.

Serve: When ready to enjoy, remove the cups from the freezer and let them sit at room temperature for approximately 5 minutes to soften slightly. If you’re using silicone molds, gently pull the edges away from the sides and invert them to release the ice cream.

Garnish: For an extra touch, top each ice cream cup with fresh strawberry slices and mint leaves, if desired. Enjoy your delightful and refreshing summer treat!
