Strawberries are the star of this recipe, providing both flavor and nutrition. They are rich in antioxidants, vitamins, and minerals, particularly vitamin C, which boosts the immune system and promotes skin health. When selecting strawberries, look for vibrant red color, firm texture, and a fresh aroma. Avoid any berries with bruises or mold, as they can affect the overall flavor of the bars.

Ingredients

2 cups fresh strawberries, hulled and halved

1/2 cup granulated sugar, divided

1/2 cup freshly squeezed lemon juice (approximately 3 to 4 lemons)

Zest of 1 lemon

1 cup Greek yogurt (plain or vanilla)

1 teaspoon vanilla extract

1 cup graham cracker crumbs

1/4 cup unsalted butter, melted

Pinch of salt

Instructions

Prepare the Strawberry Puree: In a blender, combine the halved strawberries with 1/4 cup of granulated sugar. Blend until smooth. If desired, strain the mixture through a fine-mesh sieve to remove seeds, achieving a flawless puree. Set aside.

Mix the Lemonade Base: In a mixing bowl, whisk together the remaining 1/4 cup of sugar, freshly squeezed lemon juice, and lemon zest. Continue whisking until the sugar is fully dissolved, creating a smooth citrusy mixture.

Incorporate Yogurt and Vanilla: Gently fold in the Greek yogurt and vanilla extract into the lemon mixture. Mix until the ingredients are well combined and the mixture is smooth.

Combine Strawberry and Lemon Mixtures: Carefully swirl the prepared strawberry puree into the yogurt-lemon blend. Use a spatula to create beautiful marbled swirls, being careful not to overmix as you want to preserve some pink streaks for visual appeal.

Prepare the Crust: In a medium-sized bowl, combine the graham cracker crumbs, melted butter, and a pinch of salt. Mix thoroughly until the mixture resembles wet sand, ensuring an even consistency.

Assemble the Bars: Line an 8x8-inch baking dish with parchment paper for easy removal. Press the graham cracker mixture evenly into the bottom of the prepared dish, forming a solid crust.

Pour and Freeze: Carefully pour the strawberry-lemonade mixture over the graham cracker crust, spreading it evenly with a spatula. Cover the dish with plastic wrap and place it in the freezer for at least 4-6 hours or until it is completely firm.

Serve: Once fully frozen, lift the bars from the dish using the edges of the parchment paper. Cut into squares or rectangles for serving. For an extra touch, garnish with fresh strawberry slices or a sprinkle of lemon zest before enjoying!
