2 cups plain Greek yogurt

1/4 cup honey or maple syrup (adjust to preferred sweetness)

1 teaspoon vanilla extract

1 cup fresh or frozen cherries, pitted and halved

1/2 cup dark chocolate chips (70% cocoa or higher for rich flavor)

1 tablespoon coconut oil (for smooth melting)

A pinch of sea salt

Prepare the Yogurt Mixture: In a medium-sized mixing bowl, add the Greek yogurt, honey or maple syrup, and vanilla extract. Using a whisk or spatula, mix these ingredients together until you achieve a smooth and creamy consistency. Taste and adjust the sweetness if needed by adding more honey or maple syrup.

    Add the Cherries: Gently fold the pitted and halved cherries into the yogurt mixture using a spatula. Take care not to break up the cherries too much as you want to preserve their shape and juice.

      Fill the Molds: Spoon the yogurt-cherry mixture into popsicle molds. Be sure to leave a small gap at the top of each mold to allow for expansion as the mixture freezes.

        Insert Sticks: If your molds have lids, secure the sticks through the lids. If you're using traditional molds without lids, insert the popsicle sticks directly into the mixture until they are upright and stable.

          Freeze the Pops: Place the filled molds on a flat surface in the freezer. Allow them to freeze for a minimum of 4 to 6 hours, or until they are completely solid.

            Melt the Chocolate: In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Heat this mixture in the microwave, using 30-second intervals. After each interval, stir the mixture until it becomes smooth and glossy. Watch carefully to avoid overheating.
