Ingredients

2 cups vanilla Greek yogurt

1/2 cup strong brewed coffee, cooled to room temperature

1/4 cup honey or maple syrup (to taste)

1 teaspoon vanilla extract

1/2 cup mini chocolate chips

1 1/2 cups granola (or your choice of cookie crumbs for variety)

1/2 teaspoon sea salt

12 large chocolate chip cookies (store-bought or homemade, your choice)

Instructions

Prepare the Yogurt Mixture: In a large mixing bowl, combine the vanilla Greek yogurt, cooled strong brewed coffee, honey (or maple syrup), and vanilla extract. Using a whisk, blend the ingredients together until the mixture is smooth and evenly combined. Set aside.

Incorporate the Chocolate Chips: Carefully fold the mini chocolate chips into the yogurt mixture using a spatula, making sure they are well-distributed but being gentle to maintain the creaminess of the yogurt.

Assemble the Sandwiches: Take one chocolate chip cookie and scoop approximately 1/4 cup of the prepared yogurt mixture onto the flat side. Place another cookie on top to create a sandwich. Repeat this process until all cookies and yogurt mixture have been used.

Coat with Granola: In a shallow dish, combine the granola and sea salt. Gently roll the edges of each yogurt sandwich in the granola mixture, coating them well for an extra crunch in every bite.

Freeze the Sandwiches: Arrange the coated sandwiches on a parchment-lined baking sheet, making sure they are not touching to avoid sticking. Place them in the freezer and allow them to freeze for at least 4 hours, or until they are completely firm.

Serve and Indulge: Once the sandwiches are frozen, take them out of the freezer and let them sit at room temperature for a couple of minutes to soften just slightly for easier biting. Enjoy your delicious and refreshing frozen treats!
