2 ripe mangoes, peeled and diced

1 cup plain Greek yogurt (substitute with coconut yogurt for a dairy-free option)

1/4 cup honey or maple syrup (adjust sweetness to your preference)

1/4 cup chia seeds

1/2 teaspoon vanilla extract

1/2 teaspoon freshly squeezed lime juice

A pinch of salt

Prepare the Mango Puree: In a high-speed blender, combine the diced mangoes. Blend until you achieve a smooth consistency, leaving some small chunks if you prefer a bit of texture in your bars.

    Mix Yogurt and Chia: In a large mixing bowl, thoroughly whisk together the Greek yogurt, honey (or maple syrup), vanilla extract, lime juice, and a pinch of salt until the mixture is creamy and well combined.

      Incorporate Chia Seeds: Add the chia seeds to the yogurt mixture and stir well. Allow the mixture to rest for 5-10 minutes, giving the chia seeds time to absorb moisture and swell.
