1 cup pecans, toasted and coarsely chopped

1 cup Greek yogurt (plain or vanilla for added sweetness)

1/2 cup pure maple syrup

1/2 cup graham cracker crumbs

1/3 cup packed brown sugar

1 teaspoon vanilla extract

1/4 teaspoon ground cinnamon

1/8 teaspoon sea salt

1/4 cup coconut oil, melted (or unsalted butter for a richer flavor)

1/2 cup chocolate chips (optional, for a chocolatey twist)

Instructions
 

Prepare the Crust: In a medium mixing bowl, combine the graham cracker crumbs, melted coconut oil, brown sugar, and a pinch of salt. Stir well until the mixture achieves a crumbly texture that holds together when pressed. Firmly press this mixture into the bottom of a small muffin tin or silicone molds to create a base crust. Place the tin in the freezer for about 10 to 15 minutes, or until the crust is set and firm to the touch.

    Make the Filling: In a separate bowl, combine the Greek yogurt, maple syrup, vanilla extract, ground cinnamon, and a touch of sea salt. Whisk together until the mixture is smooth and creamy. Gently fold in the chopped toasted pecans, reserving a small handful for garnishing later.

      Assemble the Rounds: Once the crust has firmed up, carefully remove the muffin tin from the freezer. Spoon the yogurt mixture over the set crusts, filling each one until just below the rim. Use a spatula to smooth the surface evenly.
