Ingredients

3 cups Rice Krispies cereal

1 cup mini marshmallows

1/2 cup creamy peanut butter

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1 cup Greek yogurt (plain or flavored)

1/2 cup chocolate chips (dark or milk)

1/4 cup crushed nuts (such as almonds or walnuts, optional)

Fresh fruit pieces (such as strawberries or blueberries for topping, optional)

Instructions

Prepare Your Base: In a large mixing bowl, blend together the Rice Krispies cereal and mini marshmallows until evenly distributed.

Make the Binder: In a small saucepan, over low heat, combine the creamy peanut butter, honey (or maple syrup), and vanilla extract. Stir continuously until the mixture is smooth and well-combined, then remove from heat.

Combine Mixtures: Pour the warm peanut butter mixture over the Rice Krispies and marshmallows. Stir thoroughly until the cereal is fully coated and the marshmallows begin to melt slightly. If you’re including nuts, gently fold them into the mixture at this point.

Shape the Bites: Lightly grease an 8x8-inch square baking dish. Using a spatula or your hands (moistened lightly with water to prevent sticking), firmly press the mixture into the prepared dish, spreading it evenly and packing it down well.

Freeze the Base: Transfer the assembled base to the freezer and let it chill for approximately 30 minutes, or until it becomes firm to the touch.

Create the Yogurt Layer: Once the base has set, remove it from the freezer, and cut it into bite-sized squares or rectangles, making sure to use a sharp knife for clean edges.

Coat with Yogurt: Dip each square into the Greek yogurt, ensuring it is completely covered. A fork works particularly well for dipping and handling. Place the yogurt-coated bites onto a parchment-lined tray for easy cleanup.

Add Toppings: Before the yogurt hardens, sprinkle chocolate chips and/or fresh fruit pieces atop each yogurt-coated bite. This step adds both flavor and a beautiful presentation.

Final Freeze: Return the tray to the freezer for an additional 1 to 2 hours until the yogurt layer is fully frozen and firm.

Serve & Enjoy: Allow the frozen yogurt bites to sit at room temperature for a few minutes before serving. This will make them easier to enjoy. These Frozen Yogurt Rice Krispie Bites make for a delightful, refreshing snack or dessert!
