1 cup uncooked jasmine rice

2 medium zucchinis, diced into bite-sized pieces

4 tablespoons unsalted butter

4 cloves garlic, finely minced

1 small onion, finely chopped

2 cups vegetable or chicken broth

1 teaspoon dried thyme

1 teaspoon salt (adjust according to taste)

1/2 teaspoon black pepper

1/4 cup freshly grated Parmesan cheese (optional, for a creamy finish)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Rice: In a medium saucepan, combine 1 cup of jasmine rice with 2 cups of broth. Bring it to a vigorous boil over high heat. Once boiling, reduce the heat to low, cover the pan with a lid, and let it simmer gently for about 15 minutes, or until the rice is tender and all the liquid has been absorbed. Once cooked, fluff the rice gently with a fork and set aside.

    Sauté the Vegetables: In a large skillet, melt the 4 tablespoons of unsalted butter over medium heat. Add the finely chopped onion and sauté for approximately 3-4 minutes, or until the onion becomes translucent and fragrant.
