Ingredients

For the Garlic Herb Salmon:

4 salmon fillets (approximately 6 oz each)

3 tablespoons extra virgin olive oil

4 cloves garlic, finely minced

1 tablespoon fresh parsley, roughly chopped

1 tablespoon fresh dill, roughly chopped

1 teaspoon dried oregano

Juice of 1 fresh lemon

Salt and freshly ground black pepper, to taste

For the Creamy Couscous:

1 cup couscous

1 1/4 cups chicken or vegetable broth

1/2 cup heavy cream

1/4 cup finely grated Parmesan cheese

1/2 teaspoon garlic powder

Salt and freshly ground black pepper, to taste

1 tablespoon chives, finely chopped (for garnish)

Instructions

Marinate the Salmon: In a mixing bowl, whisk together the olive oil, minced garlic, chopped parsley, chopped dill, dried oregano, lemon juice, salt, and pepper until well blended. Place the salmon fillets into the marinade, coating them evenly. Allow the salmon to marinate for at least 20 minutes at room temperature, or for a maximum of 1 hour in the refrigerator for deeper flavor.

Prepare the Couscous: In a medium-sized saucepan, bring the chicken or vegetable broth to a rapid boil over medium-high heat. Once boiling, stir in the couscous, then cover the saucepan and remove it from the heat. Let it sit, covered, for about 5 minutes. Afterward, fluff the couscous with a fork to separate the grains.

Make the Creamy Sauce: In a small saucepan, over low heat, combine the heavy cream, garlic powder, and grated Parmesan cheese. Stir gently and cook until the cheese has completely melted and the mixture is smooth, about 2-3 minutes. Carefully fold this creamy mixture into the fluffed couscous, adding salt and pepper to taste. Keep the creamy couscous warm while you cook the salmon.

Cook the Salmon: Preheat your grill or a non-stick skillet over medium-high heat. Remove the salmon fillets from the marinade, allowing any excess marinade to drip off. Cook the salmon for approximately 4-5 minutes on each side, or until the exterior is golden brown and the fish flakes easily with a fork.

Serve with Style: On each plate, place a generous scoop of the creamy couscous and top it with a beautifully cooked salmon fillet. For a colorful touch, garnish each plate with finely chopped chives and a wedge of lemon, enhancing both presentation and flavor.
