1 cup polenta (cornmeal)

4 cups vegetable broth

1 cup grated Parmesan cheese (plus extra for topping)

2 tablespoons unsalted butter

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon dried Italian herbs (mixed oregano, basil, thyme)

Salt and pepper, to taste

Fresh parsley, finely chopped (for garnish)

Instructions
 

Begin by pouring the vegetable broth into a medium saucepan. Place it over medium heat and bring it to a gentle simmer.

    Once simmering, slowly whisk in the polenta, taking care to eliminate any lumps. Keep stirring continuously for about 5 minutes as the polenta thickens.

      When the polenta reaches a thick, creamy consistency, reduce the heat to low. Stir in the grated Parmesan cheese, unsalted butter, garlic powder, dried Italian herbs, and a pinch of salt and pepper. Mix until everything is well incorporated and creamy.

        Transfer the polenta mixture into a greased 9x9-inch baking dish. Use a spatula to spread and smooth the top evenly. Let it cool at room temperature for approximately 30 minutes, or until it firms up.

          Preheat your oven to 425°F (220°C) during the cooling process.

            After the polenta has cooled and set, cut it into squares or rectangles. Carefully lift the pieces onto a baking sheet lined with parchment paper.

              Drizzle the olive oil over the cut polenta squares and sprinkle them generously with additional Parmesan cheese.

                Place the baking sheet in the preheated oven and bake for about 20-25 minutes, or until the edges turn a beautiful golden brown and crispy.
