1/2 cup milk (whole or 2%)

1 cup fresh spinach, chopped

1/2 cup green chili peppers, diced (choose mild or hot based on your spice preference)

1/2 cup cheddar cheese, shredded

1/4 cup red onion, finely chopped

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

Olive oil or cooking spray (for greasing muffin tin)

Optional: sliced jalapeños for additional heat, fresh cilantro for garnish

Preheat the Oven: Set your oven temperature to 350°F (175°C). While the oven heats, prepare a 12-cup muffin tin by generously greasing the cups with olive oil or a cooking spray to facilitate easy removal of the muffins after baking.

    Prepare the Veggies: In a medium mixing bowl, combine the chopped spinach, diced green chili peppers, shredded cheddar cheese, and finely chopped red onion. Stir well to create a mixed filling that will be added to the egg base.

      Beat the Eggs: In a large mixing bowl, whisk together the eggs and milk until they are thoroughly combined and slightly frothy. Add the garlic powder, onion powder, salt, and black pepper into the mixture, stirring until all the seasoning is well incorporated.
