Ingredients

8 oz. fettuccine or your pasta of choice

2 boneless, skinless chicken breasts

1 cup romaine lettuce, chopped

1/2 cup Caesar dressing (store-bought or homemade)

1/2 cup grated Parmesan cheese

1/2 cup croutons

2 tablespoons olive oil

1 teaspoon garlic powder

Salt and freshly ground black pepper to taste

Fresh lemon wedges for serving (optional)

Fresh parsley or basil, chopped for garnish (optional)

Instructions

Marinate the Chicken: In a mixing bowl, thoroughly coat the chicken breasts with olive oil, garlic powder, salt, and pepper. Cover the bowl and let the chicken marinate for a minimum of 30 minutes, or refrigerate for up to 2 hours to enhance the flavors.

Cook the Pasta: In a large pot, bring salted water to a rolling boil. Add the pasta to the boiling water and cook according to package instructions until it reaches an al dente texture. Drain the pasta, reserving about 1 cup of the pasta water, and set the pasta aside.

Grill the Chicken: Preheat a grill or grill pan over medium-high heat. Place the marinated chicken on the grill and cook for approximately 6-7 minutes on each side, or until the chicken is fully cooked, with an internal temperature reaching 165°F (75°C). Once cooked, remove the chicken from the grill and allow it to rest for 5 minutes before slicing it into strips.

Combine Pasta and Dressing: In a large mixing bowl, combine the cooked pasta with the Caesar dressing, mixing well. If you prefer a creamier texture, add small amounts of the reserved pasta water until you reach your desired consistency.

Add Romaine and Chicken: Gently fold the chopped romaine lettuce and slices of grilled chicken into the pasta mixture. Toss until everything is evenly mixed.

Serve: Transfer the pasta to serving plates and generously sprinkle with grated Parmesan cheese and croutons. If desired, garnish with freshly chopped parsley or basil for an added burst of freshness. Serve alongside lemon wedges for a zesty finish.
