Ingredients

1 lb boneless, skinless chicken breast, cut into 1-inch cubes

1 ripe pineapple, peeled, cored, and cut into 1-inch chunks

1 red bell pepper, cut into 1-inch pieces

1 green bell pepper, cut into 1-inch pieces

1 small red onion, cut into wedges

1/4 cup soy sauce

2 tbsp honey

2 tbsp olive oil

2 cloves garlic, minced

1 tsp ground ginger

1 tsp black pepper

Juice of 1 lime

Skewers (wooden or metal)

Instructions

Marinate the Chicken: In a spacious mixing bowl, combine the soy sauce, honey, olive oil, minced garlic, ground ginger, black pepper, and freshly squeezed lime juice. Whisk until smooth. Add the diced chicken breast to the bowl and ensure each piece is well-coated with the marinade. Cover the bowl tightly with plastic wrap and refrigerate for at least 30 minutes, allowing the flavors to meld. For a more intense taste, marinate for up to 2 hours.

Prepare the Vegetables and Pineapple: While the chicken completes its marinating process, wash and cut all vegetables and pineapple into uniform 1-inch pieces. This consistency is crucial for even grilling and a polished presentation.

Soak the Skewers: If you are using wooden skewers, submerge them in water for at least 30 minutes. This step is vital to prevent them from burning while grilling.

Assemble the Kabobs: After the chicken has marinated, it’s time to assemble the kabobs. Start by threading a piece of chicken onto the skewer, followed by a chunk of pineapple, a piece of red bell pepper, a piece of green bell pepper, and a wedge of red onion. Alternate between these ingredients to create a colorful and eye-catching display on each skewer.

Preheat the Grill: Preheat your grill to a medium-high setting, aiming for a temperature of approximately 400°F (200°C). This heat is perfect for achieving that delectable char on the kabobs.

Grill the Kabobs: Place the assembled kabobs directly on the grill. Grill the kabobs for about 10-12 minutes, turning them occasionally to achieve even cooking. The chicken should reach an internal temperature of 165°F (75°C) and boast appealing grill marks, while the pineapple and vegetables should exhibit a light char for enhanced flavor.

Serve: Once cooked, carefully remove the kabobs from the grill and allow them to rest for a few minutes. This resting period allows the juices to redistribute within the chicken, ensuring tenderness. Serve the kabobs warm, garnished with fresh cilantro and a wedge of lime for an extra pop of flavor, if desired.
