1 lb boneless, skinless chicken thighs

2 tablespoons olive oil

3 tablespoons fresh lime juice

1 tablespoon fresh orange juice

2 cloves garlic, finely minced

1 teaspoon ground cumin

1 teaspoon chili powder

1/2 teaspoon smoked paprika

Salt and black pepper to taste

8 small corn tortillas

1 cup shredded red cabbage

1 ripe avocado, sliced

1/2 cup fresh cilantro, chopped

1/2 cup crumbled feta or queso fresco (optional)

Lime wedges, for serving

Instructions
 

Marinate the Chicken:

    In a medium mixing bowl, combine olive oil, fresh lime juice, fresh orange juice, minced garlic, ground cumin, chili powder, smoked paprika, salt, and black pepper. Whisk until well mixed. Add the chicken thighs and ensure they are thoroughly coated with the marinade. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes. For enhanced flavor, allow the chicken to marinate for up to 2 hours.

      Preheat the Grill:

        Prepare your grill for medium-high heat. If using a grill pan, place it on the stovetop and heat it over medium-high flame.

          Grill the Chicken:

            Remove the chicken thighs from the marinade and let any excess marinade drip off. Place the chicken directly on the grill. Grill for 6-7 minutes on each side, or until the chicken is fully cooked—no longer pink in the center, and juices run clear. The optimal internal temperature should reach 165°F (75°C). Once done, transfer the chicken to a cutting board and let it rest for 5 minutes.

              Warm the Tortillas:

                While the chicken is resting, warm the corn tortillas on the grill for about 30 seconds on each side. You want them to become pliable with a slight char.

                  Slice the Chicken:

                    After resting, slice the grilled chicken into strips or bite-sized pieces for easy assembly.

                      Assemble the Tacos:
