4 large whole wheat tortillas

1 cup shredded sharp cheddar cheese

1 cup hatch green chilies, roasted and chopped (fresh or canned)

1 cup black beans, rinsed and drained

1 cup corn (fresh, frozen, or canned)

1 large avocado, sliced

1 cup baby spinach or mixed greens

1 medium red bell pepper, sliced into thin strips

½ cup red onion, thinly sliced

1 tablespoon olive oil

1 teaspoon ground cumin

Salt and pepper to taste

Juice of 1 lime

Optional garnish: fresh cilantro, sour cream, or yogurt on the side

Prepare the Filling: In a large mixing bowl, combine the roasted hatch green chilies, black beans, corn, sliced avocado, baby spinach (or mixed greens), red bell pepper, and red onion. Drizzle the mixture with olive oil and lime juice, then sprinkle in the ground cumin. Season with salt and pepper to taste. Gently toss all the ingredients together until evenly mixed.

    Assemble the Wraps: On a clean, flat surface, lay one tortilla out. In the center of the tortilla, sprinkle ¼ cup of the shredded cheddar cheese, ensuring to leave about an inch of space around the edges. Spoon approximately ½ cup of the prepared veggie filling over the cheese.
