Hatch Chili Grilled Flatbread Pizzas

2 cups all-purpose flour (plus extra for dusting)

1 packet (2 ¼ tsp) active dry yeast

¾ cup warm water (around 110°F/43°C)

1 tsp granulated sugar

½ tsp salt

2 tbsp olive oil (plus more for brushing)

1 cup roasted Hatch green chiles, chopped

1 ½ cups shredded mozzarella cheese

½ cup crumbled feta cheese

½ cup cherry tomatoes, halved

¼ cup fresh basil, chopped

1 tsp garlic powder

1 tsp onion powder

Fresh cracked black pepper, to taste

Balsamic glaze, for drizzling

Instructions
 

Prepare the Dough: In a small bowl, combine the warm water, sugar, and active dry yeast. Allow it to sit for about 5 minutes until it becomes frothy. In a larger mixing bowl, whisk together the flour and salt. Pour the yeast mixture and olive oil into the flour, stirring until a shaggy dough forms.

    Knead the Dough: Turn the dough out onto a lightly floured surface. Knead for approximately 5-7 minutes, until the dough is smooth and elastic. Transfer the dough to a greased bowl, cover it with a clean kitchen cloth, and let it rise in a warm, draft-free area for about 1 hour, or until it has doubled in size.

      Preheat the Grill: While the dough is rising, prepare your grill for medium-high heat, ideally preheating it for about 10-15 minutes if using a gas grill.

        Shape the Flatbreads: Once the dough has risen, punch it down gently to release any air. Divide the dough into 4 equal portions, then roll out each portion on a floured surface to achieve a thickness of about ½ inch.

          Grill the Flatbreads: Lightly brush each side of the flatbreads with olive oil. Place them carefully on the grill. Grill for approximately 3-4 minutes on one side, or until nice grill marks form. Flip the flatbreads and grill for an additional 2-3 minutes on the other side.

            Add Toppings: After flipping, immediately layer each grilled flatbread with a generous amount of mozzarella cheese, chopped Hatch chiles, halved cherry tomatoes, and crumbled feta. Sprinkle evenly with garlic powder, onion powder, and freshly cracked black pepper.

              Finish Grilling: Close the grill lid to retain heat and cook for another 2-3 minutes, or until the cheese has melted and is bubbly.

                Garnish and Serve: Carefully remove the pizzas from the grill. Just before serving, top with freshly chopped basil and drizzle with balsamic glaze for an extra touch of flavor.
