2 boneless, skinless chicken breasts

1/4 cup honey

1/4 cup soy sauce

4 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon rice vinegar

1 teaspoon sesame oil

Salt and pepper to taste

For the Sandwiches:

4 pieces of flatbread (naan or pita work well)

1 cup fresh spinach, rinsed and dried

1 cup shredded carrots

1/2 cucumber, thinly sliced

1/4 red onion, thinly sliced

1/2 cup creamy feta cheese or hummus (optional)

Fresh cilantro leaves for garnish

Sesame seeds for garnish

Instructions
 

Marinate the Chicken:

    - In a medium bowl, combine honey, soy sauce, minced garlic, grated ginger, rice vinegar, sesame oil, salt, and pepper. Whisk until well blended.

      - Place the chicken breasts in the marinade, turning them to ensure they are fully coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or overnight for a more intense flavor.
