Marinate the Pork Chops: In a medium mixing bowl, whisk together the Dijon mustard, honey, apple cider vinegar, olive oil, minced garlic, salt, black pepper, dried thyme, and smoked paprika until well combined. Place the pork chops into a large zip-top bag or a shallow dish and pour the marinade over them, ensuring each chop is thoroughly coated.
