Lemon Ricotta Stuffed Shells with Basil

12 large pasta shells

1 cup ricotta cheese

1 cup fresh mozzarella cheese, shredded

1/2 cup grated Parmesan cheese

Zest of 1 lemon

Juice of 1 lemon

1 cup fresh basil leaves, finely chopped

2 cups marinara sauce (store-bought or homemade)

2 cloves garlic, minced

1 teaspoon olive oil

Salt and pepper, to taste

Extra fresh basil for garnish

Cook the Pasta Shells: Start by bringing a large pot of salted water to a rolling boil. Carefully add the pasta shells and cook them according to the package instructions until they are al dente. Once done, drain the shells and rinse them under cold running water to halt the cooking process. Set the shells aside in a colander.

    Prepare the Filling: In a large mixing bowl, combine the ricotta cheese, half of the shredded mozzarella, grated Parmesan, lemon zest, lemon juice, chopped basil leaves, minced garlic, and a generous pinch of salt and pepper. Stir the mixture thoroughly until all the ingredients are well blended and the mixture is creamy. Set the filling aside.

      Preheat the Oven: While you prepare the filling, preheat your oven to 375°F (190°C) so it’s ready for baking.

        Stuff the Shells: Take each cooked pasta shell and gently spoon the ricotta filling into it, making sure to fill each shell generously. Once filled, place the stuffed shells seam-side up in a greased 9x13 inch baking dish.

          Add Marinara Sauce: Evenly pour the marinara sauce over the stuffed shells, ensuring that they are fully covered in sauce. Then, sprinkle the remaining shredded mozzarella on top for a cheesy finish.

            Bake the Dish: Cover the baking dish with aluminum foil and place it in the preheated oven. Bake for 25 minutes. After this time, carefully remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and has developed a lovely golden color.
